The Best Sourdough Glazed Donuts

This easy lunch comes together in 30 minutes or less and has something for everyone. Try these BBQ Chicken Veggie Bowls tonight!

I don’t think any two kids are alike, and I have four that are pretty different from each other. When I make meals, I try to add at least one thing to the table that I know they will all eat, even if it’s just cutting up an apple!

This meal is easy to customize according to your family’s taste preferences. I wouldn’t skip the pineapple though, it takes it to the next level. I love adding lots of colors to my plate and this meal makes that easy.

BBQ Chicken Veggie Bowls

Serves: 4 servings
Ingredients
  • 4 organic boneless skinless chicken thighs
  • Tessemae’s BBQ sauce (or other sauce of choice)
  • 1/2 head red cabbage, sliced
  • 1 red pepper, roughly chopped
  • 1/2 green pepper, roughly chopped
  • 2 stalks celery, sliced
  • 2-3 c [url href=”http://www.simplelifebykels.com/how-to-make-cauliflower-rice/” target=”_blank”]cauliflower rice[/url]
  • Avocado or coconut oil
  • Salt and pepper
Instructions
  1. Add chicken to instant pot or pressure cooker and drizzle generously with BBQ sauce. Close the lid. Push “manual” and adjust the time for 10 minutes.
  2. Prepare other veggies, including caulirice.
  3. Heat 3 pans over medium/high heat on the stove with a little bit of avocado or coconut oil in each.
  4. Pan 1: add caulirice with seasoning of choice.
  5. Pan 2: add cabbage with some salt and cover.
  6. Pan 3: add chopped peppers and celery.
  7. Saute all the veggies until crisp-tender.
  8. While veggies are cooking, cut up some fresh pineapple.
  9. When the chicken is done, let the steam out and then shred it with two forks.
  10. Assemble your bowls according to personal preferences and enjoy!

    It does look so colorful and pretty! Great easy meal with options for kids to customize, perfect 🙂 Okay and I also want to ask, I don’t have a problem with diary, it doesn’t make me sick or bloated but it seems like everyone recommends not eating it because it messes with set point or hormones or weight or whatever. I realize a lot of people it makes them not feel well (whether they realize it or not) So just to be healthier should I cut it out because its not really good for me? or should I just keep eating it because my body does fine with it. Guess what I’m asking is why does dairy get such a bad wrap? Just respond when you have time 🙂 Thanks

      Dairy does have a bad wrap, for several reasons. The main reason I don’t eat it is because it’s an inflammatory food. Meaning, it inflames our digestive system when we eat it (even if we don’t feel it). I didn’t ever think it bothered me until I eliminated it for 30 days on whole 30 then reintroduced it and BAM. Now I avoid it more than gluten! Which is crazy. Some people don’t eat it because of the hormones and other additives. Some (like me) have looked too much into how it’s produced, and I just can’t do it anymore. I don’t think I will ever drink milk commercially again. If I do have dairy, it’s mostly raw and well sourced. I just try to be conscientious of where my food comes from. I think it can be good in some forms if it doesn’t bother you, but in large amounts (drinking milk, eating yogurt, lots of cheese, ice cream, etc) I don’t think that is the best. For me it comes down to there are just so many other things that I could be nourishing my body with, I almost don’t have room for it anyway! More veggies. LOL. I do eat pizza every once in a while and you bet I’m gonna have my tiger ice cream when I come up there in August! hahaha. Some things are just worth it.

        Thanks so much for your info, when we get back from holidays I’m going to eliminate it and see. Your reply had mor info than I found on th Internet searching, but maybe I just wasn’t looking correctly.
