Natural Yeast is similar to sourdough starter that your grandmother may have used. This method of making bread and other baked goods has been around for thousands of years. Natural yeast introduces natural bacteria into your dough, which neutralizes harmful acids and activates enzymes that break down proteins in the grains/flour (think gluten). The yeast also unlocks all of the many vitamins and minerals that are otherwise unavailable to us. It enhances your bread and makes it more digestible, and predigests starches (sugars) ensuring an even blood sugar level upon consuming it — unlike it’s commercial counterparts.
Natural yeast is much milder than sourdough, and is kept in the fridge, which slows down the growth and makes it less maintenance than traditional sourdough. You only have to feed your natural yeast starter every 3-4 days.
This freeze dried starter is my very own starter that has been tracked back to be over 200 years old! When working with natural yeast, it is important to find a starter that you know raises bread well and is happy and thriving. There are over 1,000 strains of wild yeast, so getting a good one is tricky – some may be extra sour, some might not raise bread very well, etc.
My starter is wonderful and I knew I wanted to share beyond my reach. Freeze drying is the most optimal way to preserve food. It retains ALL nutritional properties (i.e. bacteria and yeasts in the starter), unlike dehydrating or freezing, which can reduce the nutrition in a food by up to 50%. This is the reason why reconstituting dehydrated flakes yields a more sour starter that is often hard to get up and running.
