Hi, I'm Kels!

The Best Sourdough Glazed Donuts

Another breakfast recipe? Yes, please. There is a definite chill in the air in the mornings now, and I love it. My family could eat hot cereal every morning of the year. When my girls have been old enough to gum down oatmeal I have started them on it and they have both been huge fans. I cook old fashioned oats and top with some milk and pure maple syrup. It’s simple, but so easy and so good for you. When I saw this recipe for overnight steel cut oats I had to try it.

Overnight Apple Cinnamon Steel Cut Oats (adapted slightly from ourbestbites.com)

2 baking apples (I used 1 Granny Smith and 1 Gala)
1 1/2 cups milk (I used whole)
1 1/2 cups water
1 cup steel cut oats
2 tablespoons coconut sugar
2 tablespoons butter
1 teaspoon ground cinnamon
1 tablespoon ground flax seed or wheat germ
natural salt

Toppings: coconut sugar, cinnamon, maple syrup, honey, raisins, chopped nuts, milk/cream, etc.

Grease the sides and bottom of a 4 qt (or larger) slow cooker. I used my 6 qt. CrockPot. Combine all the ingredients except for the salt and additional toppings in the slow cooker.
Cover and cook on low for 7 hours. Serve with additional toppings. Serves 5-7.

Tiny hands are always sneaking into my pictures of food . . . interesting. She pulled a chair right over to the counter, climbed up, and helped herself. I guess it was a hit!

Thoughts:

I shouldn’t really label this as “overnight” oats. The original recipe said to cook for 7 hrs on low in the slow cooker.  I turned it on around 11 p.m. and set my alarm for 6 a.m. Luckily (only for this one instance, every other time it’s annoying) I’ve been waking up at 4 or 4:30 a.m. every morning for the past couple of months. I don’t have to use the bathroom or anything, I’m just wide awake. On this particular morning I woke up to a wonderful smell. I had a feeling I should just check on the slow cooker and good thing I did. The oats were completely done at that point, so I turned it down to warm and went back to bed. The oats were still warm and delicious when we got up, but it would have been an absolute disaster if I left them for another couple of hours cooking. Next time (and believe me, there will be a next time) I will just combine everything the night before and cook it the next morning for about 30 mins or so (regular cooking time for steel cut oats). The combination of cinnamon, apples, and oats was perfect for a fall breakfast. I don’t think you can go wrong with those flavors. I sprinkled salt on everyone’s bowls before serving, along with some milk and maple syrup. I will be making this again soon.

I'll totally try this. The recipe I did before was with steel cut oats but in the fridge overnight. Thanks for the recipe 🙂

I saw this recipe on OBB and was wondering about the cooking timing…I didn't want to have to stay up or get up at a weird hour for oatmeal 🙂 Thanks for the alternate cooking suggestion…I will definitely try this recipe now 🙂

This may seem silly but would you cook the oats in the crockpot for 30mins or on the stovetop? (I haven't cooked steel cut oats before).

Karen — cook them on the stovetop for 30 mins. They should work out perfectly!
