The Best Sourdough Glazed Donuts

I originally posted this recipe almost 3 years ago! These Paleo Fudge Cups are one of the most-viewed recipes on my site.

This recipe is one of my favorites for fast, easy, delicious, and healthy (yup, I said it) treats. DELICIOUS. Did you ever eat icy cubes as a kid? Am I the only person who remembers those?

hated them at the time. If they were offered I would eat one, but I didn’t really like them that much. I always thought they were a little strange. This “fudge” reminds me of those, but in a really good way. If you are “off” sugar, or are trying to eat better but NEED something sweet, look no further.

Paleo Fudge Cups
Ingredients
  • 1/2 c coconut oil, melted
  • 1/2 c peanut or almond butter
  • 1/2 c [url href=”http://amzn.to/2klHFzJ”]raw cacao powder[/url] (or cocoa)
  • 1/4 c raw honey or maple syrup
  • 1/2 tsp vanilla extract
Instructions
  1. Whisk together coconut oil and honey.
  2. Add remaining ingredients and whisk to combine until smooth.
  3. Line a standard muffin tin with paper liners, or use a [url href=”http://amzn.to/2kMEMIY”]silicone mold[/url]
  4. Pour chocolate mixture into liners about 1/4 full.
  5. Place in the freezer for 10 minutes or until set.
  6. Remove from liners and place in a container in the fridge (use wax paper to separate layers).

I only have a couple of thoughts about this . . . make them, and eat them. It’s that simple. I made my first batch with peanut butter but felt bad because my daughter is allergic and couldn’t try one . . . or did I do it on purpose so that she couldn’t have any? 

I have tried the almond butter version as well, but I am a die hard peanut butter fan. She didn’t like the almond butter ones anyway, so I always opt for PB.
I labeled these as “paleo” because they have all paleo ingredients and are a paleo treat to me. Others have different definitions of what is strictly “paleo” or not. Feel free to disregard the label if it makes you feel funny . . .

    These look great – and this pregnancy I've been craving sweet thing (which hasn't really ever happened) so this would be an EXCELLENT recipe for me to try!

    these are in the freezer right now. because cooling them in the fridge will take TOO LONG.

    These are my favorite sugarless treat! Love the flavor and the smooth chocolatey taste. I did mine in a blender and I feel like there was waste because I couldn't quite get it all out underneath the blades. So good!

    i tried these and they came out great, but i messed up and forgot the step about licking the spoon, so now i have to make a whole other batch!

  7. I've only ever used maple syrup when I make these and they come out great 🙂 I just used a chunky almond butter this time and a pressed a whole almond in the center 🙂

    Hi – i've tried these twice and they taste great. Today I ran the numbers on them though and was a bit shocked.

    i used peanut butter and raw honey

    total calories = 2380, 170 carbs, and 40 grams of protein.

    i ended up with 10 in a wilton mini cupcake mold.

    so each one was 238 calories and 17 carbs!

    any way to reduce these numbers?
