The Best Sourdough Glazed Donuts

I have been buying the same wild rice mix from Costco for about 3 years now. I love it. I always cook it with some chicken broth and it’s turned out pretty good for me. My sister-in-law recently posted that she bought some of the same mix for the first time. While she was in Costco she noticed another girl picking some up and asked her how she cooked it. From that simple question, a miracle happened. This girl got really excited and told my sis-in-law that she had perfected it and had a fail-proof way to cook it. I immediately tried it when she posted about it, and got really excited. This is by far the best way to cook this rice that I’ve found.
Wild Rice Pilaf
1 1/2 c wild rice mix (I use the Organic Harvest Medley from Costco)
3 c boiling water
2 T butter
1 T chicken bouillon (I use Better Than Bouillon from Costco)**
Preheat oven to 375 degrees. Place all ingredients into a baking dish. Stir to melt butter and dissolve bouillon a bit. Cover tightly with foil. Bake in oven for 75-80 minutes. IMPORTANT: don’t peek! Just leave the foil alone and let it bake for the recommended time, trust me, it will be delicious.
** you can replace the boiling water and bouillon with chicken stock, just make sure that you heat it to boiling first! 
Thoughts:
I will be making this my go-to recipe for rice from now on. With a little planning ahead to make sure you have enough time, this is such a great side dish. I halved the recipe the first time, which was perfect for my family of 4 (well 5, but only 4 who are eating solids . . .). I made a whole recipe a couple of weeks ago and made a quick and easy fried rice with the left overs the next day. If you’ve had any rice woes in the past, give this recipe a try. It’s got a slight crunch from being baked, and is really really good paired with some roasted veggies and salmon.

    I love rice pilaf and this sounds delicious! We're moving somewhere with a Costco right now because I'm pretty sure it's killing me not having one here. Ugh.

    Stupid question – would it be pretty much the same thing to make this with chicken stock, instead of water + boullion?

  6. Just so you know, I did make this tonight and followed the directions to a T, and it turned out delish.
    My kiddos loved it.
    My costco only sells the wild rice pilaf with quinoa and it worked out really great too.
